Top 5 Rules of Freezing for Foods that You Can Freeze For Your Customers

Many times at a get-together meals, we often hear, “How did you freeze that?” or “Which food freeze well? Or don’t?” There is no thumb rule of freezing food items, but yes, there are a few tips which you need to consider well before you do the freezing activity, if you own a small eatery or a decent dine out. A restauranteur, especially, must know this art. We make our own rules and break them too while we evolve in the process of freezing food items. Let us begin knowing the rules of freezing one by one:
1.       Fruits: Do your customers crave for some of your favourite seasonal fruits like mangoes? Had you been well versed in the art of freeing the fruit, you would have enjoyed it throughout the year, right? Well, the good news is that you can freeze all the fruits. Just wash them properly, dry them with a clean towel or under air, and divide the fruits into easy portions. Store the portions in small packages and freeze. Fruits, if stored properly, can be stored for one entire year. You can store berries of all kinds, bananas, apples, kiwi, pineapple, mangoes, nectarines, peaches and cherries. Just take them out and make wonderful smoothies. Use them as desserts or serve as it is.
2.       Vegetables: Most of the vegetables can take space in your restaurant’s freezer. Just like fruits, wash them properly, dry and make small portions. Try blanching the vegetables to keep them at their peak. Drop the vegetables in hot water, then immediately into ice cold water and then dry them. You can freeze onions, pumpkins, tomatoes, corns, green leafy vegetables and squash.
3.       Dairy: Dairy products like milk, cheese, cream cheese and even yoghurt are frozen widely. For freezing cheese, just make sure to either slice, cube or shred so that it does not crumble later. What about eggs, any idea? Yes, they can be frozen only outside their shells. Use ice trays to freeze eggs. Now, the notorious ones, sour cream and cream cheese are not famous for their freezing abilities. However, after freezing if they are heated slowly, they are most likely to return to their normal taste. But no points for presentation says Gordon Ramsay in me. Food without presentation is a no-no for the restaurant.
4.       Pantry Items: There are many pantry items that you can store in the freezer if you have pantry space crunch. Nuts are preferred to be frozen (this way their natural oils are saved), then chocolate chips and chocolate bars can be frozen. All-purpose flour can be stored in the freezer in humid months. This greatly saves cost.
